Ginger Fried Rice
Ingredients
- 2 Tbsp Sesame Oil
- 2 Stalks Green Onion - seperate the whites and greens
- 1/2 cup Soy Sauce
- 1 Tbsp Garlic Chili
- 3 cloves garlic - minced
- 1 tsp Ginger - grated
- 1 Carrot - julienned
- 1/2 cup frozen peas
- 1/2 onion - diced
- 2 Eggs
- Salt and pepper to taste
- Cold Cooked Short Grain Rice
Instructions
- Prepare rice 24 hours in advance and store, covered, in the refrigerator.
- Heat 2 Tbsp sesame oil in a large pan or wok over medium-high heat.
- Add diced onion and the whites of the green onions; sauté until tender.
- Add garlic and ginger; cook until fragrant (about 30 seconds).
- Increase heat to high. Add cold rice, carrots, and peas. Toss and press the rice to break up clumps until heated through.
- Push rice to the side, add eggs to the center, scramble until set, then fold back into the rice.
- Stir in soy sauce and sriracha. Garnish with green onion tops.
